Bananas for this bread

So they’re actually muffins again, not bread, but I already had a cute muffin-related title, and wanted to change things up a bit. I think I’ve hit the baking stride, now, thanks in part to Isa Chandra’s delicious recipe here: I made a few adjustments, the first being making muffins instead of a loaf as they go quicker and I had something else in the oven at the same time and temp (post coming soon). I used 2 large, mostly ripe bananas, which worked just fine, added about 2 T flax seed, and about half flour and half bran flakes. I also used maple syrup as my sweetener, and pierced each finished muffin with a fork while cooling so I could drizzle a little extra maple into the warm muffin crevices. Best breakfast-to-go so far!
